NOTE: The recommended front overhang of 18 inches is achieved by installing so that the inside-back of the hood is 2 inches from the back of the oven flue collar. The hood should overhang the front of all facades by at least 8 inches to allow removal and cleaning of filters.

The SG-BDL-O-WS ventilator is manufactured by Gaylord Industries specifically for Wood Stone ovens. The eyebrow-type hood mounts directly on top of the oven, over the flue collar and over-hangs the oven doorway. This ventilator is designed to capture all the solid-fuel exhaust from the oven flue collar and also to draw warm air away from the front of the oven. The hood comes complete with a pre-drilled mounting flange and all the hardware necessary for mounting the hood to the top of the oven.

The hood is constructed of 18-gauge, stainless steel (#4 finish on exposed sides) and is equipped with UL classified spark arrestor, baffle-type filters for removal of grease from the exhaust stream. The Wood Stone SG-BDL-O-WS is listed by UL, ULC and NSF. Its construction meets the requirements of NFPA-96 as well as those of all national mechanical codes.

The hood can be used in conjunction with one of Wood Stone’s variable-speed exhaust fans (see above) to create a very effective and responsive exhaust system. All ductwork beyond the ventilator duct take-off collar is provided and installed by others in accordance with applicable codes. All exhaust ducts for Wood Stone ovens must be grease and water tight with continuous external welds.

The model CG-BDL-BB-CA-CM-WS ventilator is designed and manufactured by Gaylord Industries specifically for the Wood Stone Mt. Olympus solid-fuel rotisserie. The ventilator is a high efficiency, centrifugal grease extractor that is UL Listed under the category "Exhaust Hood with Exhaust Damper". The extraction chamber contains four full length, self-draining baffles that remove grease by centrifugal force as the air is drawn around them at a high rate of speed. The grease extraction efficiency is 95% when operated and maintained in accordance with design specification. Two of the baffles are wash manifolds, and at the end of the cooking day, are activated to wash the day’s accumulations of grease from the extraction chamber with hot, detergent-injected water.

The extraction chamber on the front side of the ventilator includes a constant cold water mist manifold at the air inlet manifold for compliance to NFPA-96 spark arrestor requirements. A thermostatically-activated fire damper is provided at the air inlet slot of each, which automatically closes in the event of a fire, in conjunction with the wash sprays coming on and the exhaust fan shutting off.

The ventilator is constructed of all type 18-gauge 304 stainless steel. A control cabinet housing the fan and wash controls and all plumbing components for the wash and constant cold water mist system is provided as standard equipment.
