THIS OVEN HAS BEEN CURED, HOWEVER SLOW WARMING IS STILL NECESSARY TO AVOID THERMAL
SHOCKING OF THE OVEN WHICH CAN CAUSE EXCESSIVE CRACKING.
FIRST FIRING— The infrared burner is preset for 200F, DO
NOT ADJUST THE FLOOR SET POINT DURING THIS FIRST FIRING.
Push the ON/OFF button on the controller, the
hearth set point should display 200F. The infrared/under
floor burner will come on until the floor has warmed to 200F.
Build a small kindling fire of newspaper and ruler sized pieces of wood directly on the
floor of the oven against the side of the dome. To start the fire in the oven, use a wad
of newspaper or similar type of paper, with kindling or wood shavings on top, placed
directly on the floor of the oven. Light with a match and add progressively larger pieces
of wood until the fire will burn for 30 to 45 minutes without adding more wood. Do not
build the fire in the center of the oven. The temperature sensor (thermocouple) is located
3/4 of the way back, at the center of the floor, one inch under the surface and will give
false readings if the fire is placed on top of it. As the fire gets established, increase
size of wood (2" to 3" in diameter) and maintain constantly for 7 to 9 hours.
During this first fire period the oven should raise no more than 50 degrees F. per hour
until a maximum of 250 degrees F. is reached.
At the end of the first day, turn the gas burner off, put a
fireplace sized piece of wood on the fire and install the doors to
retain the heat for the night.
SECOND DAY
Rekindle fire and continue to raise temperature 100 degrees per hour until the
desired cooking temperature is reached. At this point you can program the set point of the
controller for the desired floor temperature (see "Adjusting the Floor Set
Point" on page 19). The infrared under floor gas burner is designed to act as an
assist to the wood fire.
Note: Small "crazing" cracks will occur with normal heating and
cooling. They will not effect the performance or durability of the oven. If cracks of
1/32" or more develop, contact Wood Stone for evaluation.
